Champagne : VEUVE CLICQUOT - Yellow Label 12x 37.5cl Half Bottles A Champagne House is eventually judged on the quality of its Brut Non Vintage. It is in the making of such a wine that the true Art of Champagne blending reveals itself. This is an art in which the House of Veuve Clicquot excels. Our Brut Yellow Label reflects the superb vineyards we own and the consistent nature of our House style. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine.Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is : 50 to 55% Pinot Noir -+ 15 to 20% Pinot Meunier -+ 28 to 33% Chardonnay. These figures vary slightly from year to year according to conditions. The Chef de Caves has to achieve the total consistency of taste, which makes Yellow Label so immediately recognisable, so utterly reliable both in terms of quality, colour and bouquet. He will draw on priceless Reserve wines for the blend: from 25 to 35%, sometimes as much as 40% to ensure the continuity of the House style. Each of these older wines - perhaps 9 years old - is kept separately to preserve the unique qualities of the vineyard and the vintage.First, Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny bubbles. Next it is so pleasing to the nose: initially reminiscent of white fruits and raisins, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The first sip delivers all the freshness and forcefulness so typical of Yellow Label with a symphony of fruit tastes following on. Here is a true member of the powerful Brut family, well structured, admirably vinous. The lingering aromas echo and re-echo, with each fruit or spice note distinct.Veuve Clicquot Yellow Label manages to reconcile two opposing factors - forcefulness and finesse - and to hold them in perfect balance. This consistent power to please makes it ideal as an aperitif, and perfect as the Champagne to enjoy with a meal.

Champagne : VEUVE CLICQUOT - Vintage Reserve 1996 75cl Bottle November 2002. The winter of 1996 is very cold, temperatures reach ?15-¦C without however damaging the vines. The spring is dry and sunny, budding starts between 20th and 24th April depending on the grape varieties. May is dull and cool and some spring frosts damage the Champagne vineyards. The Veuve Clicquot vineyards are spared: thanks to their location on the slopes, they are not too sensitive to this type of frosts.July is very dry and the second fortnight almost leads to a drought situation for the vineyards. Some salutary rains in late August bring back optimum conditions for the growth of the vine. The harvest starts on September 16th for the early villages. Harvest conditions are excellent: dry and hot weather. Never in living memory has such a great balance been reached in Champagne between maturity (10-¦ GL) and acidity (10 g/L in H2SO4). The very dry weather conditions have naturally concentrated the components of the grape. The first tastings are very promising and are the signs of long-keeping wines. The Vintage Reserve 1996 is composed of 59% of pinot noir, 8% of pinot meunier (i.e. two thirds of black grapes), and 33% of chardonnay. The choice of the origin of the grapes is of prime importance: only 20 Crus, exclusively Grands and Premiers Crus, are used in the blending of this cuv+¬e. They are located in the Montagne de Reims, the Grande Vall+¬e de la Marne and the C+¦te des Blancs. The Vintage Reserve 1996 shows a beautiful deep gold colour, with slight green hues. The sparkle is lively and persistent. The nose is expressive and complex. The first impression is of citrus, yellow fruit (peach, apricot, mirabelle plum) together with subtle dry fruit aromas (hazelnut, almond) and spices (cinnamon, vanilla, honey). In the mouth, it is very full and well structured, and for its age, still dominated by freshness, truly representative of the 96 vintage. Richness and intensity are wonderfully associated. The remarkable balance means that this champagne will keep for a exceptional length of time. The lingering impression of volume and power definitely place this vintage 1996 in the true Veuve Clicquot style. In its youth, a great aperitif wine, and in a few years it will be a wonderful champagne on your table, where it will be the perfect match for seawater fish (Bass, Turbot, John Dory). This vintage 1996 will probably be listed along with the mythical Clicquot vintages, for which only a long ageing will bring out the numerous aspects of this wine. As for its famous predecessors, age will have become a virtue.

Each wine is individually fermented in oak casks prior to blending. On average, the blend is composed of 65% pinot noir and 35% chardonnay. The Grande Annee always ages for a minimum of five years in its bottle, magnum or jeroboam corked with a traditional cork. Champagne Bollinger PDG, Ghislain de Montgolfier says, Grand Annee 1997 is a superb win. We could describe it as a blend of the monster '96 and the rich '89'.
Champagne : BOLLINGER - Special Cuvee 75cl Bottle Bollinger only produces two different blends: that designed for the non-vintage Special Cuv+¬e, and that which will become vintage Grande Ann+¬e. Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuv+¬e is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine. The denomination Special Cuv+¬e was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine non vintage. The suggestion of naming it Special Cuv+¬e was immediately approved by Monsieur Bollinger.A blend par excellence, the Special Cuv+¬e is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged.Madame Bollinger - I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty.
Champagne : BOLLINGER - Grand Ann+¬e 1997 75cl Bottle Grande Annee, the name, signifies that Bollinger's vintage champagne is only released during 'great' years. The Grande Ann+¬e blend comes only from a particularly fine harvest. When such a harvest occurs the House selects its best wines, cru by cru and grape variety by grape variety - the key to the particular year. Each wine is individually fermented in oak casks prior to blending. On average, the blend is composed of 65% pinot noir and 35% chardonnay. The Grande Annee always ages for a minimum of five years in its bottle, magnum or jeroboam corked with a traditional cork.
